Standard or native whey proteins: understanding the differences between them, for better use

Standard whey proteins

Standard whey proteins are obtained from whey produced during cheese or casein manufacturing. Thanks to the various chemical, thermal or enzymatic treatments they undergo, these proteins have a higher or lower protein concentration depending on the level of filtration.

Standard whey protein powders with a concentration exceeding 70% are rich in essential amino acids and therefore offer excellent nutritional value. Among these, leucine occupies a special place, as it plays a key role in muscle synthesis.

Native whey proteins are produced by microfiltration and cold ultrafiltration directly from skimmed milk, and are distinguished by their non-denaturing manufacturing process, which preserves their structure and nutritional qualities (4).
They have a high protein content (80-90%), with a complete aminogram of essential amino acids and BCAAs, as well as leucine (+11 to 12% more than non-native whey protein)(5). Furthermore, they are rapidly absorbed, which can be beneficial for many applications.

They are easy to incorporate into formulations, with little impact on the texture and taste of the finished product. They are ideal for products with high nutritional value, intended for high-level athletes or senior citizens.
